Our organic Schoepfbread is made out of 100% Spelt, with long fermentation (48 hours) and two different starters (Bruehstueck and fermented pre-dough). The spelt flour has more minerals, vitamins and more protein than wheat and less gluten. The flour is considered a healthy, nutritious alternative to regular wheat flour.
Our bread has a slightly crunchy crust and a soft and mild crumb, less fibre a stays longer fresh.
